Chocolate Brownie Cake

Philip (my Father in Law) this is one for you. Got to say I was a little bit disappointed that it wasn’t as ginormous as the picture on the recipe showed, but that is where my disappointment ended. It was very chocolatey and gooey and yummy.

Ingredients

175g unsalted butter, plus extra for greasing

225g dark chocolate, broken into pieces

200g caster sugar

3 medium eggs (I used 4)

65g plain flour

50g chopped pecan nuts

 

Method

  1. Heat oven to 180c/fan 160c/gas 4. Butter a 20-25cm cake tin and line with greaseproof paper.
  2. Place 175g/6oz of the chocolate (not all of it just 175g), plus the butter and sugar in a heavy-based pan and heat gently until melted, stirring occasionally. Leave to cool.
  3. Whisk the egg yolks into the chocolate mixture, then add the flour, nuts and the remaining chocolate.
  4. Whisk the egg whites until they form soft peaks, then gently, but thoroughly, fold into the chocolate mixture.
  5. Pour into the prepared tin and bake in the centre of the oven for about 35-40 mins until crusty on top. Leave to cool, then run a knife around the sides and remove from the tin. Dust with icing sugar and serve warm with ice cream or cream.

 

I added an extra egg to the mixture as recommended by others to make the centre nice and gooey! And it worked, it was crusty on top and gooey in the middle. Other than that I followed the recipe exactly and cooked for 40 mins.

I always get confused when recipes say ‘whisk’. Am I actually supposed to be using an electric whisk or will an electric hand mixer do? I wasn’t really sure so I mixed the egg yolks, chocolate, flour and nuts with the electric hand mixer. But when I got to doing the egg whites I used the electric whisk. All worked out fine. Next time I will do the egg whites with the mixer just to see if the results are the same. I’ll let you know! Don’t try mixing the nuts in with hand mixer, just use a spoon/rubbery spatular.

Make sure you have two nice big bowls at the ready. I had used my big bowl for the chocolate mix and then didn’t have another one for the egg whites. I managed to dig out a big plastic salad bowl for the cupboard which did the trick. Did sacrifice a wine glass in the struggle to get the bowl out!

Other than that it all went well! I do want to make a giant one next time though like the picture!!
